If you love the flavor of apple pie and other desserts, but you’re working on healing and want to avoid gluten, dairy, and other ingredients typically in those desserts, try this warming apple compote with a side of banana ice cream. You won’t miss out on flavor, but you’ll be using only healing ingredients.
Apple’s anti-inflammatory properties make it a top pick when you’re faced with practically any illness. Encephalitis (brain inflammation), IBS (intestinal inflammation), and viral infection (which can result in nerve inflammation) are just a few conditions in which apples can play the critical nutritional role of calming your system by reducing pathogen loads that create inflammation.

Directions:
To make the banana ice cream, combine the frozen bananas and vanilla in a food processor. Process the bananas until you have a smooth, soft-serve consistency, adding warm water or almond milk by the tablespoon as needed to prevent sticking. Place in an airtight container in the freezer to set for 3-5 hours.
Preheat oven to 350F/180C.
In a medium-sized bowl, mix together the apples, maple syrup, maple sugar and lemon juice. Divide between ramekins or place in one large baking dish.
Bake in the oven for 30-45 minutes, until the apples are soft. Sprinkle mulberries on top and bake for another 10 minutes, until lightly browned.
Remove from oven and rest at room temperature for 10-15 minutes to allow the juices to thicken as they cool.
Serve while still warm, topped with ice cream.
