Applesauce provides sweetness, flavor and moisture to this wonderful cake, along with the fragrant addition of cinnamon and nutmeg. This cake can be enjoyed on its own or with the addition of the decadent cashew frosting. Grab a cup of herbal tea and enjoy a slice either way! As always, this Medical Medium recipe is egg-free, dairy-free, and gluten-free.
Applesauce Cake

Directions:
Preheat oven to 350F/180C. Grease a loaf pan with coconut oil or line with parchment paper. Set aside.
In a medium-sized bowl, whisk together the ground flaxseeds and water. Set aside for 5 minutes.
Add the applesauce, coconut sugar, coconut oil, and vanilla to the flaxseed mixture. Whisk until uniform.
In another bowl, whisk together the oat flour, brown rice flour, potato starch, baking powder, baking soda, cinnamon, and nutmeg. Whisk until uniform and lump-free.
Pour the wet ingredients into the dry. Stir until evenly mixed.
Pour the batter into the prepared baking pan and bake for 45-50 minutes, until browned on top and a toothpick comes out clean when inserted.
Cool for 5 minutes in the baking pan, then gently remove and place on a wire rack to cool completely.
To make the cashew frosting, add the drained cashews, maple syrup, lemon juice, and water to a blender and blend until very smooth, for 4-5 minutes, scraping down the sides as needed.
When the cake is cool, spread the frosting over the top. Slice and serve.
