Layers of sweet, heavenly fruits that will give your brain the fuel it needs. When you put this trifle in the fridge for a few hours or more, it firms up and becomes almost like a fruit cake with layers of banana “bread,” sweet mango puree, and a wild blueberry–raw honey jam.

Banana, Mango & Wild Blueberry Trifle
Ingredients:
Directions:
Place the mango flesh in a blender and blend until smooth. Set aside.
Place the wild blueberries in a sieve over a jug or bowl to let all the liquid drain. Add the drained wild blueberries to the blender with the raw honey and blend until smooth. Use the leftover wild blueberry juice for another recipe or drink as a beverage.
If using a big trifle bowl, slice the bananas lengthwise into thick slices. If using small serving dishes, slice crosswise into rounds.
Add two layers of sliced banana to the bottom of your dish, overlapping slightly. Follow with a layer of mango puree; then spoon the wild blueberry jam evenly on top of the mango. Smooth out and repeat with the remaining ingredients.
Garnish with fresh blueberries or fresh or thawed frozen wild blueberries (if using). Refrigerate for a few hours or overnight.
