Chickpea Tuna Salad Pinwheels

These plant-based pinwheels mimic the flavor of tuna salad but with a chickpea filling. Rolled up in red lentil tortillas or zucchini ribbons, these creamy chickpea “tuna” salad pinwheels are sure to please. These pinwheels are a great option to serve to others or even to make something fun just for yourself. Either way, they bring plenty of flavor and satisfaction.

High in the trace minerals zinc, manganese, iodine, and selenium, onions help rejuvenate the skin and protect the lungs.

Celery starves unproductive bacteria, yeast, mold, fungus, and viruses that are present in the body.

Sea vegetables are beneficial for the bones, tendons, ligaments, connective tissue, and teeth.

Chickpea “Tuna” Salad Pinwheels

Ingredients:

For the chickpea “tuna” salad:

  • 1 1/2 cups cooked chickpeas
  • 1/3 cup finely chopped red onion
  • 1/2 cup finely chopped celery
  • 1/2 tsp mustard powder
  • 2 1/2 tbsp tahini
  • 2 1/2 tbsp lemon juice
  • 1 tbsp chopped fresh dill
  • Sea salt, to taste (optional)
  • 1 tbsp shredded nori (optional)

For the pinwheels:

Red Lentil Tortillas

Or

1-2 small zucchinis, cut into ribbons with a vegetable peeler

Directions:

Make the red lentil tortillas, if using. Or prepare the zucchini ribbons.

To make the chickpea “tuna” salad, add the chickpeas to a medium-sized bowl and mash with a fork or potato masher until almost completely smooth.

Add the red onion, celery, mustard powder, tahini, lemon juice, dill, and sea salt (if using). Mix until combined.

Spread the salad all over a tortilla or zucchini strip and roll up. Cut the rolled up tortilla into pinwheels. Repeat with rest of ingredients and serve immediately.

Serves 2-3
