Cilantro Chutney

This fresh and fragrant Raw Cilantro Chutney is an excellent way to get more of the healing and cleansing properties of cilantro into your diet. You can enjoy it as a dip, drizzled onto salads or crudités, as a condiment in any of the Medical Medium burger and sandwich recipes, or simply eat it straight off a spoon!

Cilantro Chutney

Ingredients:

  • 4 cups tightly packed cilantro leaves, roughly chopped
  • 3 tbsps freshly squeezed lime or lemon juice
  • 2 tbsps raw honey or 2 pitted Medjool dates
  • 2-inch piece of ginger, roughly chopped
  • 3 garlic cloves
  • 1 tsp ground cumin
  • 1⁄2 tsp sea salt (optional)
  • 1⁄4-1⁄2 tsp cayenne
  • 1-2 tbsps water, if needed to blend

Directions:

Combine all the ingredients except the water in a food processor and process until smooth, scraping down the sides as needed. If needed, you can add the water to help the ingredients process smoothly; however, in most cases if you keep scraping down the sides of the food processor, you won’t need the water. Serve immediately or refrigerate until needed.

Tips:

  • While high-quality sea salt or mountain rock salt is an optional inclusion in this recipe, the recipe is more healing without salt. Over time, you may wish to reduce or exclude the salt.
