Potato hash recipes can be as versatile as you’d like them to be. This recipe harnesses the flavors of curry spices and combines them with potatoes, peas, tomato, and fresh cilantro to make an aromatic and satiating dish.

Curried Potato, Pea & Cilantro Hash

Place a ceramic nonstick skillet on medium-high heat. Add the onion and cook for 3 to 5 minutes until soft, adding a bit of water if needed to prevent sticking.
Add the garlic, curry powder, cumin, coriander, chili powder or cayenne, and turmeric to the pan. Cook for a further 1 to 2 minutes until the spices are fragrant.
Add the potatoes, tomato, and water to the pan. Stir until evenly mixed, then cover, turn the heat to low, and simmer for 10 to 15 minutes until the potatoes are almost tender.
Stir in the raw honey, peas, and cilantro. Cook for 3 to 5 minutes until the peas are tender.
Divide the hash between two bowls and top with cayenne or red pepper flakes, a squeeze of lemon juice, and more cilantro. Serve immediately.
