Strawberry Banana Bread

Preheat your oven to 350°F (180°C). Line a loaf pan with baking paper and set aside.
In a large mixing bowl, add the bananas and mash until smooth. Some lumps are fine. Add the maple syrup, coconut sugar, alcohol-free vanilla extract or vanilla powder, and water to the bananas. Stir until well mixed.
Add gluten-free oat flour, baking powder, and baking soda to the wet ingredients, and mix until a smooth batter forms. Gently fold in roughly chopped strawberries into the batter.
Transfer the batter to the lined loaf pan. Arrange thinly sliced strawberries on top for decoration (if using). Bake in a preheated oven for 45 to 55 minutes or until the bread is golden brown and a toothpick inserted into the center comes out clean. Allow the strawberry banana bread to cool before slicing.
This banana bread is best served fresh but can be stored in an airtight container at room temperature for 1 to 2 days.
