Fries With Three Dipping Sauces

Almost everyone loves a bowl of fries! In this recipe, baked potato fries are the star with your choice of one, two, or three dipping sauces. Pick one or make them all—whatever feels good to you! All the sauces are full of flavor and contain only healing ingredients. This recipe comes from the Revised and Expanded Edition of Medical Medium.

Potatoes will be your allies if you’re looking to fight any chronic illness—to help fend off liver disease, strengthen your kidneys, soothe your nerves and digestive tract, and help with Crohn’s, colitis, IBS, or peptic ulcers. In addition to being antiviral, they’re antifungal and antibacterial, with nutritional cofactors and coenzymes plus bioactive compounds to keep you healthy and assist you with stress.

Fries With Three Dipping Sauces

Ingredients:

  • 4-5 large potatoes, cut into fries

Ketchup:

Honey mustard:

  • 3 tbsp raw honey
  • 3/4 tsp mustard powder
  • 2 tbsp lemon juice
  • 1/2 clove garlic, finely grated
  • 1/8 tsp ground turmeric

Pesto:

  • 1 1/2 cups basil leaves, tightly packed
  • 1 cup spinach, tightly packed
  • 1 garlic clove, roughly chopped
  • 4-5 cherry tomatoes
  • 1 tsp raw honey
  • 1 tbsp lemon juice

Directions:

Preheat oven to 430°F/220°C. Line two large baking sheets with parchment paper.

Spread the fries out into a single layer on the baking trays. Bake for 30-40 minutes (flipping halfway), or until golden and crispy.

To make the ketchup, combine all the ingredients in a small bowl and whisk until uniform. Set aside.

To make the honey mustard dip, combine all the ingredients in a small bowl and whisk until uniform. Set aside.

To make the pesto, place all the ingredients in a small blender or food processor and process until combined, leaving a little texture. Scrape down the sides as often as needed.

When the fries are ready, remove them from the oven and serve them with the dipping sauce(s) of your choice.
