Directions:
To make your own garam masala blend, combine all the ingredients in a small bowl and mix well.
Place a large ceramic nonstick skillet on medium-high heat. Add the onion and cook for 3 to 5 minutes, until soft, adding a bit of water if needed to prevent sticking.
Add the garlic, ginger, and garam masala. Cook for a further 1 to 2 minutes until the spices are fragrant.
Add the potatoes, tomato, bell peppers and Healing Broth or water to the pan. Stir until evenly mixed, then cover, turn the heat to low, and simmer for 10 to 15 minutes until the potatoes are tender.
Divide between two bowls and top with a squeeze of lime or lemon juice and the cilantro. Serve immediately.
