In a large bowl, whisk together the oat flour, arrowroot starch, baking soda, cinnamon, nutmeg, cloves, ginger, and coconut sugar.
In another bowl, stir together the date or maple syrup, applesauce, lemon juice, and melted coconut oil. Add the dry ingredients to the bowl and stir with a spatula until you get a uniform, smooth dough. Divide the dough in two parts, wrap each piece in parchment paper or plastic wrap and refrigerate for 1 hour.
Preheat oven to 325F/165C. Line two large baking sheets with parchment paper.
Working with one piece of dough at a time, place it between two sheets of parchment paper and roll out with a rolling pin to about 1/4 to 1/2-inch thick.
Using cookie cutters, press shapes into the dough and pull away the excess. Form the excess into a large ball and continue rolling out and cutting shapes until all the dough is gone.
Transfer cookies to baking sheets and bake for 11-14 minutes, until lightly browned on the edges. Cool on a cooling rack before eating.
