This vibrant and delicious salad brings together the flavors of the holidays. With roasted butternut squash and brussels sprouts, on a bed of tender leafy greens and herbs, topped with the full flavor of a cranberry-orange sauce, this salad will truly satisfy! These ingredients all offer tremendous healing benefits also.
Butternut squash is high in carotenoids that protect liver cells from damage. The glucose in this squash can stabilize the liver, allowing blood sugar to stabilize overall in the body.
Leafy greens are an extremely cleansing tool for your liver that you can apply on a daily basis. They’re loaded with the mineral salts our brains and bodies need.
Cranberries contain an anthocyanin that helps prevent oxidation in cells. The vitamin C in cranberries holds similarities to the rare vitamin C in tomatoes in that it increases the liver’s immune system strength.
Healing Holiday Salad
Ingredients:
Directions:
Preheat oven to 430F/220C. Line a large baking sheet with parchment paper.
Add the butternut squash and brussels sprouts to the baking sheet. Drizzle with maple syrup and sprinkle sea salt on top (if using). Stir until evenly coated.
Roast or steam for 15-25 minutes, until the vegetable are tender. Remove from oven and set aside.
In a medium-sized bowl, add the leafy greens, herbs, lemon juice, and raw honey. Toss until evenly coated.
Place the leafy greens on a serving bowl or platter and top with roasted (or steamed) vegetables and cranberry-orange sauce. Serve immediately. Enjoy!
