Directions:
Soak your skewers in cold water. If roasting the skewers, preheat oven to 400F/200C.
Add the chopped vegetables, mushrooms, lime juice, and sea salt to a large bowl. Stir until evenly coated.
Thread the vegetables and mushrooms onto the soaked skewers. Place on a baking tray covered with parchment paper and roast in the oven for 10-15 minutes, until all the vegetables are tender and browned. Alternatively you can cook the skewers on a large skillet or grill pan, rotating as needed, for 15-20 minutes or until tender.
Combine all the sauce ingredients in a blender and blend until very smooth. Add more water or nut butter as needed to reach a desired consistency.
Serve immediately with the sauce drizzled over the top of the skewers and chopped cilantro to finish.
