This gluten-free and dairy-free version of the traditional Austrian caramelized pancake dessert, Kaiserschmarrn, is so delicious and indulgent. Enjoy it when you want a healthy treat that will satisfy a sweet, comfort food craving or make it to share with friends or family.

In a medium-sized mixing bowl, combine the oat flour, brown rice flour, potato starch baking powder, sea salt (if using), and vanilla and whisk until uniform.
Pour in the milk and 3 tablespoons of maple syrup slowly while whisking until you get a uniform, smooth batter.
Place a medium-sized ceramic non-stick pan on medium-high heat. Pour in the batter and spread it around the pan. Sprinkle the raisins on top (if using).
Cook on one side until bubbles form on the surface, about 4 to 5 minutes, then flip the pancake and cook for another 2-3 minutes. Break the pancake into pieces and add the extra tablespoon of maple syrup to the pan. Cook, stirring often, until the pancake pieces are golden brown and lightly caramelized.
Serve immediately with cinnamon and maple syrup or jam.
