These fries are crispy and so delicious, without using any oil. To make this recipe, you’ll need to prepare the potatoes the day before and keep them in the refrigerator overnight, so it’s a perfect recipe to use up steamed potatoes that you have left over or that you batch prep each week for easier meals. Mashed Potato Fries

Directions:
Add 3 inches of water to a medium pot, insert a steaming basket, add the potatoes, and cover. Steam for 15 to 18 minutes until tender. Remove from the heat and cool for 10 minutes; then place them in a large bowl or pot.
Add the onion powder, garlic powder, paprika, and thyme or oregano to the potatoes. Mash with a potato masher until almost smooth; some bigger pieces are okay.
Transfer the mixture to one or two square or rectangular containers, and press the mash down until evenly spread to about 1 inch thick. Cool completely at room temperature, uncovered; then cover and refrigerate overnight.
The next day, preheat the oven to 430°F/220°C. Line a large baking sheet with parchment paper.
Flip the container(s) upside down onto a cutting board. Tap a few times if the mashed potato brick doesn’t come loose right away. Cut into chunky fries and transfer to the prepared baking sheet, leaving a bit of space between the fries. Bake for 40 minutes, flip, and then cook for a further 20 to 30 minutes until the fries are browned and crispy all over.
Make the barbecue sauce by whisking together all the ingredients until smooth. Serve fries immediately with the sauce or ketchup. Enjoy!
