If you’re a fan of risotto, try this upgraded version made with millet, which is a superior grain to rice for someone who is working on healing. It’s also a tasty grain with a slightly nutty flavor. Mushrooms, onions, garlic, and herbs add healing nutrients and flavor to this meal that is best enjoyed for dinner alongside a leafy green salad.

Mushroom and Herb Millet Risotto
Ingredients:
Directions:
Place a large ceramic nonstick pot on medium-high heat. Add the onion and mushrooms and cook for 3 to 5 minutes until softened.
Add the garlic and cook for another 2 to 3 minutes. Reduce the heat to medium-low.
Add the millet, paprika, thyme, oregano, and 1 cup of Healing Broth or water. Stir until evenly mixed. Cook for 17 to 20 minutes, stirring every few minutes and adding more Healing Broth or water as needed.
When the millet is cooked, stir in the fresh parsley or basil. Add the sea salt if using and stir.
Serve immediately.
*For the mushrooms, wash and rinse thoroughly with warm to hot water before slicing. Do not use slimy or decaying mushrooms. That’s a sign of oxidizing and aging.
