Peanut butter and jelly is a classic sandwich that brings about fond childhood memories for many. The potato waffle bread gives a different spin to the PB&J sandwich and is a healthier alternative that is gluten-free including options for nut butters and jams that are free of harmful additives. This PB&J waffle sandwich is a better option for kids or for those who just can’t live without their past time favorite.
PB&J Waffle Sandwich

Directions:
Place the potatoes in steamer or colander set over a pan of boiling water. Cover with a lid and steam for 40-50 minutes or until tender when pierced with a fork. Remove and cool completely. Add the potatoes to a mixing bowl and mash with a potato masher until lump-free.
Heat a ceramic non-stick waffle machine to high heat. Add the mashed potato until the base of the waffle machine is evenly covered, then close the machine and cook until the waffle is crispy, about 10-15 minutes. Repeat with rest of the mixture.
Spread jam and peanut butter on top of the waffles, cut or fold over and serve immediately.
