Try this delicious spin on the Turkish dish, pilav, which is traditionally made with rice. In this recipe, enjoy the subtle nutty flavor of millet instead as the grain, along with a fragrant mix of herbs, spices, and vegetables. This pilav makes a great side alongside other favorite dishes, or enjoy it as a main dish either alone or with a salad or veggie sides to accompany it.

Drain and rinse the millet. Set aside.
Place a medium-sized pot over medium-high heat. Add the onion and sauté for 5 to 8 minutes, until soft and lightly browned. Add a bit of water if needed to prevent sticking. Stir in the carrot, celery, garlic, turmeric, ground cumin, ground coriander, red pepper flakes, cinnamon, and garlic. Continue cooking for another 1 to 2 minutes, until the spices are fragrant.
Add the millet and healing broth to the pot. Bring to a boil, cover, and reduce heat to low. Simmer for 10 to 15 minutes, stirring occasionally or until all the liquid has absorbed and the millet is tender.
Stir in the peas, lemon juice, and sea salt (if using) and remove from heat.
Divide the pilav between serving bowls. Garnish with parsley or cilantro and serve immediately.
