This simple bake is both pretty and tasty. It is a wonderful side dish when you want an alternative to mashed potatoes, whether it’s for a holiday meal, lunch or dinner with family or friends, or a simple but yummy meal for yourself.
Potatoes are what I call a critical clean carbohydrate. They provide critical glucose that fuels every cell and organ of the body, including the brain. They are also rich in lysine, which is anti-pathogenic.

Potato and Cherry Tomato Bake
Ingredients:
Directions:
Preheat the oven to 350°F/180°C.
Add 3 inches of water to a medium pot, insert a steaming basket, add the potatoes, and cover. Steam for 15 to 18 minutes until tender. Cool for 10 minutes.
Place the potatoes in a large bowl together with the onion powder, garlic powder, lemon juice, thyme, oregano, and raw honey. Mash until almost smooth (some bigger chunks are okay).
Place the mashed potatoes in a 10-inch quiche pan or baking dish of a similar size. Press the tomato halves evenly on top.
Bake for 50 to 55 minutes until browned on top. Cool for 10 minutes before serving.
