Simple, elegant and pretty, this galette really lets the star ingredient–potato–shine. Serve this galette with a salad or soup or another dish of your choice. It can be eaten hot or even cold.
Potato Rosemary Galette
Ingredients:
Directions:
Preheat oven to 400F/200C.
Brush an oven safe skillet with olive oil.
Line the base of the skillet with a layer of potato slices, overlapping slightly. Continue for another layer, then sprinkle with herbs, sea salt, and pepper and brush very lightly with oil. Repeat making layers with the rest of the potatoes, seasoning and brushing with oil between every few layers.
Place the skillet on the stove on medium-high heat until it begins to sizzle, then transfer the oven safe skillet to the middle of the oven. If you don’t have an oven safe skillet, you can flip the contents of the skillet over into an oven safe pan before placing in the oven.
Bake the galette for 25-30 minutes, or until it is golden on top and the potatoes are tender.
Remove from the oven and let it cool for 5-10 minutes.
Serve as is or loosen the sides of the galette with a paring knife, place a cutting board or platter on top of the skillet and carefully flip over, inverting the potatoes onto the board. Lift the skillet and serve.
