Potato Salad

It’s hard to beat a good potato salad. Whether you enjoy it during the 3:6:9 Cleanse or you make it a staple afterward, it’s a meal that is always satisfying and comforting. The fresh herbs plus the cucumber and radish in the potato salad give it flavor and crunch while helping you digest the potatoes better. That’s a win-win.

All of the ingredients in this recipe hold healing properties. Let’s take a look at two of them. 

Potatoes: Abundant in amino acids that specifically inhibit viral growth. Potatoes are high in glucose that provides substance to the liver, as it’s precisely what the liver relies on to keep strong. It also helps build up glycogen storage, the very resource that protects us against blood sugar problems, weight gain, fatty liver, and dirty blood syndrome. Potatoes keep the liver grounded and stable, giving us a good constitution. They’re also shunned for being 
a nightshade, when in truth they have the ability to reverse many varieties of chronic illness. 


Parsley: Its phytochemicals have anti-troublemaker effects that dislodge poisons and catapult them out of your liver. The intense green pigment in parsley contains an alkaloid specifically for liver rejuvenation; tissue in the liver improves when exposed to these alkaloid compounds. Parsley has
a purging effect on gallbladder sludge, though not on gallstones. Its phytochemical compounds settle at the bottom of the gallbladder, where the sludge lies, to do their good. 


Potato Salad 

Ingredients:

  • 2 pounds potatoes, peeled and diced 
  • 1 garlic clove, minced 
  • 1/4 cup roughly chopped fresh parsley 
  • 2 tablespoons finely chopped green onion 
  • 1/2 teaspoon mustard powder 
  • 2 teaspoons fresh lemon juice 

OPTIONAL ADDITIONS 

  • 1/2 cup thinly sliced radish
  • 1/2 cup thinly sliced cucumber 
  • 1/2 cup chopped asparagus, steamed or raw

Directions:

Add 3 inches of water to a medium-sized pot, bring it to a boil, and add a steaming basket. Place the potatoes in the basket, cover, and steam for 5 to 10 minutes, until tender. Remove and place in a bowl. 

Add the garlic, parsley, green onion, mustard powder, and lemon juice. Mix well. Add any additions you would like. 

Divide between bowls and serve.

Tip:

  • If you don’t like parsley, you can replace it with another herb you do like, such as basil, dill, or cilantro.
