These Spicy Fajitas are a fun, crowd-pleasing recipe, packed with flavor. You can simply enjoy the fillings on their own—with or without tortillas—or add the salsa and guacamole for additional flavor and satisfaction!

Spicy Fajitas

Ingredients:

  • ½ cup thinly sliced onion (any color)
  • 2 medium portobello mushrooms, thinly sliced*
  • 3 cups thinly sliced orange, yellow, and red bell peppers
  • 1 ½ tsps garlic powder
  • ½ to 1 tsp chili powder, to taste
  • 1 tsp paprika
  • ½ tsp ground cumin
  • ¼ tsp sea salt (optional)
  • 2 tbsps roughly chopped cilantro, to serve
  • 4-5 tortillas, to serve**
  • 2-3 lime wedges, to serve

Guacamole:

  • 2 medium avocados, peeled and pitted
  • ¼ cup finely chopped celery
  • ¼ cup loosely packed cilantro leaves, finely chopped
  • 2 tbsps finely chopped onion
  • ½ garlic clove, minced
  • ¼ tsp sea salt (optional)
  • 1-2 tbsps freshly squeezed lime juice, to taste

Salsa:

  • 1 cup finely chopped tomatoes
  • 2 tbsps finely chopped red onion
  • 2 tbsps loosely packed, roughly chopped cilantro leaves
  • ½ garlic clove, minced
  • 1 tsp finely chopped red serrano pepper or red jalapeño
  • ½ tsp ground cumin (optional)
  • 1-2 tbsps freshly squeezed lime juice, to taste

Directions:

Place a large ceramic nonstick skillet on medium-high heat. Add the onions and portobello mushrooms and cook for 5 to 7 minutes, stirring often, until soft. Add a few tablespoons of water if needed to prevent sticking.

Add the sliced bell peppers, garlic powder, chili powder, paprika, cumin, and sea salt (if using) to the pan. Cook for 4 to 6 minutes on high heat until the peppers are browned and tender. Remove from the heat and set aside.

To make the guacamole, add the avocados to a medium bowl. Mash using a potato masher or a fork until the mash is smooth but still has a few bigger chunks. Add the remaining ingredients and mix together gently with a spoon. Set aside.

To make the salsa, combine all the ingredients in a medium bowl and mix well. Set aside.

Assemble the fajitas by adding a few tablespoons of the onion, mushroom, and bell pepper filling to the bottom of the tortillas, followed by 1 tablespoon each of the guacamole and salsa. Try to discard as much liquid as possible from the salsa so that it doesn’t soften the tortilla. Top with a bit of chopped cilantro and serve immediately with the lime wedges.

*For the mushrooms, wash and rinse thoroughly with warm to hot water before slicing. Do not use slimy or decaying mushrooms. That’s a sign of oxidizing and aging.

**For the tortillas, you can use the Millet Tortillas or the Potato Tortillas (both recipes in Brain Saver Protocols).

Tips:

  • For an option free of radical fat, omit the guacamole. It will still taste great.
  • Both the Millet Tortillas and Potato Tortillas are perfect for this recipe. The Millet Tortillas are easier to make, but the Potato Tortillas are perfect for anyone on a grain-free diet. Both recipes are free of any radical fats.
  • If you use store-bought tortillas, look for a product that doesn’t contain any corn, gluten, vinegar, or other problematic ingredients.
  • While high-quality sea salt or mountain rock salt is an optional inclusion in this recipe, the recipe is more healing without salt. Over time, you may wish to reduce or exclude the salt.
