Place the sundried tomatoes in a heatproof bowl and cover with boiling water. Soak for 30 minutes, then drain and place in a blender.
Add the raw honey, lemon juice, thyme, oregano, and garlic. Blend until smooth but chunky, scraping down the sides and adding water as needed to blend.
Serve immediately or keep refrigerated until needed.
