Sweet Potato Casserole

This is the perfect side dish for a holiday table, whether it’s Thanksgiving or Christmas, or to share with family and friends anytime. It’s delicious comfort food made only with pure and clean ingredients. Enjoy it in abundance knowing you will be satisfying your tastebuds while serving your body well.

Sweet potatoes are an important glucose and glycogen storage food for the liver. All sweet potatoes and yams are beneficial, even white sweet potatoes. They help support almost every function for which the liver is responsible inside our bodies.

Sweet potatoes have phytochemical properties that calm heated, angry, stagnant, sluggish, and toxic livers and help prevent spasming. They also offer a range of hormone-balancing phytochemicals for the liver; the liver uses sweet potatoes and yams to regulate and control some of its hormone functions.

Sweet Potato Casserole

Ingredients:

  • 3 lbs sweet potatoes
  • 3 tbsp maple syrup
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • 1 tsp alcohol-free vanilla extract or pure vanilla powder
  • ¼ cup unsweetened almond or coconut milk (optional)

Topping:

  • ½ cup maple sprinkles
  • 1 cup pecan pieces or ½ cup more maple sprinkles

Directions:

Preheat oven to 400°F/200°C. Line a large baking sheet with parchment paper. Arrange the sweet potatoes on top and prick with a fork. Bake for 45 to 60 minutes, until tender. Set aside until cool enough to handle. Lower the heat of the oven to 350°F/180°C.

Peel the sweet potatoes and place in a medium-sized mixing bowl. Mash until smooth. Add the maple syrup, cinnamon, nutmeg, vanilla and milk (if using) and stir until uniform.

Transfer the sweet potato mixture to a medium-sized baking dish and top with maple sprinkles and pecan pieces.

Bake for 16 to 18 minutes, until the top has browned. Remove and cool for 10 to 15 minutes before serving.
