Sweet Potato Nacho Soup

This creamy and flavorful soup offers a fantastic combination of flavors in each mouthful. Enjoy it alongside a salad for a satisfying and healing meal.

Sweet Potato Nacho Soup

Ingredients:

  • 6-7 cups peeled and diced sweet potatoes (about 2 lbs)
  • 2 ¼ cups heated Healing Broth or water
  • 1 tbsp chopped fresh ripe hot pepper
  • 2 garlic cloves
  • 1 ½ tbsps onion powder
  • 1 tsp paprika
  • ¼ to ½ tsp cayenne
  • ½ tsp dried oregano
  • 2 tbsps freshly squeezed lime juice
  • 1 tbsp tomato paste
  • ¼ cup loosely packed chopped cilantro leaves, to serve
  • ¼ cup loosely packed chopped green onion, to serve

Directions:

Place the sweet potato in a steamer basket set over a pot of boiling water, cover, and steam for 15 to 18 minutes, until tender. Remove and cool for 5 minutes.

Add the steamed sweet potato into a high speed blender together with the hot Healing Broth or water, fresh hot pepper, garlic, onion powder, paprika, cayenne, oregano, lime juice, and tomato paste. Blend until very smooth, 2 to 3 minutes on high speed.

Divide between soup bowls and garnish with the cilantro and green onion. Serve immediately.

Tips:

  • When you’re choosing between Healing Broth and water for the ingredients, keep in mind that the broth will produce a richer flavor. Store-bought vegetable stock isn’t called for because it’s very difficult to find a variety that’s free of oil, salt, natural flavors, and/or other additives. For convenience, make a batch of Healing Broth in advance and freeze it (consider pouring into ice cube trays for easy thawing) so you have it on hand for recipes like this.
  • Look for a tomato paste that contains only tomatoes and no other ingredients, such as salt or citric acid.
