Sweet Potato Nori Wraps

Sweet Potato Nori Wraps

Ingredients:

  • 1 pound sweet potatoes (any color) or winter squash (any variety other than spaghetti squash), peeled and cut into thick sticks
  • 4 nori sheets
  • 2 to 3 tbsps freshly squeezed lemon, lime, or orange juice
  • 4 cups tightly packed leafy greens
  • 1 cup julienned red, yellow, or orange bell pepper
  • 1 cup julienned cucumber
  • 1 cup sprouts
  • 1 cup loosely packed cilantro leaves

Directions:

Add 3 inches of water to a medium pot, insert a steaming basket, add the sweet potatoes or winter squash sticks, and cover. Steam the potatoes or squash 13 to 16 minutes until soft. Remove and cool completely.

Place a nori sheet shiny side down on a chopping board with the long edge facing you. Squeeze just a few drops of lemon, lime, or orange juice onto the nori sheet and use your fingers to roughly spread the juice over the nori sheet so that it’s very lightly moistened.

Arrange the sweet potato or winter squash sticks, leafy greens, prepared bell pepper and cucumber, sprouts, and cilantro leaves on one end of the sheet. Squeeze a few more drops of lemon, lime, or orange juice across the end of the sheet; then roll up tightly and cut in half. Repeat with the remaining ingredients and serve immediately.

Tips:

  • While steamed sweet potatoes offer the most healing benefits, you can also bake your sweet potatoes to include in these nori wraps if you like.
