Wild Blueberry Cardamom Donuts

These fat-free donuts are so delicious. They’re an excellent option for anyone wanting to enjoy a donut while avoiding greasy, fried donuts and their health drawbacks. The vibrant pops of wild blueberries make them pretty to look at and the cardamom will fill your kitchen with a wonderful aroma.

Wild blueberries are armed with dozens of antioxidant varieties that science does not yet know about, along with polyphenols, anthocyanins, anthocyanidins, dimethyl resveratrol, and as yet unknown cofactor adaptogenic amino acids.

Wild Blueberry Cardamom Donuts

Ingredients:

  • 2 medium-sized ripe bananas
  • ½ cup raw honey
  • 1 cup gluten-free oat flour
  • ½ cup brown rice flour
  • ½ cup tapioca starch
  • 1 tsp baking powder
  • ¼ tsp ground cardamom
  • ½ cup frozen wild blueberries

Directions:

Preheat your oven to 350°F (180°C).

In a large mixing bowl, mash the ripe bananas until smooth. Add raw honey to the mashed bananas. Mix well until the ingredients are combined.

In a separate bowl, whisk together gluten-free oat flour, brown rice flour, tapioca starch, baking powder, and ground cardamom.

Gradually add the dry ingredients to the banana-honey mixture. Stir until a smooth batter forms. The batter should be thick but pourable.

Gently fold the frozen wild blueberries into the batter. Stir until evenly distributed.

Spoon or pour the batter into a non-stick or silicone donut mold, filling each about ⅔ full. Place the donut pan in the preheated oven and bake for 14 to 16 minutes or until the donuts are golden brown and a toothpick inserted into the center comes out clean.

Once baked, remove from the oven and allow the donuts to cool in the pan for a few minutes. Carefully transfer the donuts to a wire rack to cool completely.

These donuts are best enjoyed when fresh but can be stored in an airtight container at room temperature for a day or two.
