Wild Blueberry Sorbet

This beautiful sorbet is light, tangy, and refreshing. It’s perfect for a morning or afternoon pick-me-up thanks to the readily available glucose from the fruits and raw honey and the adaptogenic nature of the wild blueberries.

Wild blueberries contain dozens of unique and many undiscovered antioxidant phytochemical compounds. These antioxidant compounds break up debris pockets that have formed as a byproduct of heavy metals interacting and aging in the brain—it’s like the dentist breaking up plaque on your teeth. Wild blueberries also go after the metals themselves.

Wild Blueberry Sorbet

Ingredients:

  • 3 cups frozen wild blueberries
  • 2 tbsps freshly squeezed lemon juice
  • ½ tsp lemon zest
  • 2 to 4 tbsps water
  • ⅓ cup + 2 tbsps raw honey or pure maple syrup, or more to taste

Directions:

Place the wild blueberries, lemon juice and zest, 2 tablespoons of water, and raw honey or maple syrup in a high-speed blender or food processor and process until smooth, adding up to 2 more tablespoons of water if needed. Scrape down the sides as needed.

Once the mixture is smooth, taste it for sweetness and add a bit of additional raw honey or maple syrup if needed.

Serve the sorbet immediately, or transfer to an airtight container and freeze for a couple of hours for a harder consistency.
