Zucchini Noodles With Marinara Sauce
Ingredients:
Directions:
Place a ceramic nonstick pot on medium-high heat. Add the onion or shallot and cook, stirring occasionally, until very soft, 8 to 10 minutes. Add a bit of water if needed to prevent sticking.
Add the garlic and cook, stirring occasionally, until very soft, about 5 minutes. Add the tomato paste and cook for 1 to 2 minutes until the paste begins to caramelize.
Add the tomatoes, dried oregano, and red pepper flakes. Stir until evenly mixed. Reduce the heat, cover, and simmer gently, stirring occasionally, until the tomatoes are soft, 30 to 40 minutes. Remove the lid and cook for a further 10 minutes until the sauce is thick. If using jarred tomatoes, then you can reduce the overall cooking time by half.
Transfer the sauce to a blender or food processor, add the basil leaves, and pulse a few times until you get a chunky sauce. Set aside.
Place a ceramic nonstick frying pan on medium-high heat and add the spiralized zucchini. Sauté while tossing the noodles with tongs until al dente, 2 to 3 minutes.
Divide noodles between two bowls and top with the sauce. Garnish with a bit of basil and serve immediately.
