Zucchini Pizza Boats

Directions:
Preheat the oven to 400°F/200°C. Line a baking sheet with parchment paper.
Trim the ends off each zucchini; then cut in half lengthwise. Carefully scoop out the flesh from the center of each half to form a cavity. Place each half, cut side up, on the baking sheet. Discard the flesh or set aside to use in other dishes.
Make the pizza sauce by mixing together the tomato paste, oregano, thyme, raw honey, and water. Divide the pizza sauce between the zucchini halves and add different topping combinations to each.
Bake for 20 to 25 minutes until the zucchini is tender but not mushy. Sprinkle zucchini boats with fresh basil and serve.
*For the mushrooms, wash and rinse thoroughly with warm to hot water before slicing. Do not use slimy or decaying mushrooms. That’s a sign of oxidizing and aging.
