This flatbread tastes amazing and is incredibly versatile. Rosemary Potato Flatbread
Ingredients:
Directions:
Add 3 inches of water to a medium pot, insert a steaming basket, add the potatoes, and cover. Steam the potatoes for 20 to 25 minutes until soft. Remove the potatoes and place them in a bowl or pot together with the onion powder, garlic powder, and paprika. Mash until smooth. Set aside for 10 minutes to cool.
Preheat the oven to 400°F/200°C. Line a baking sheet with parchment paper. Add the cassava flour and potato starch to the mashed potatoes, and knead until you get a soft dough that isn’t sticky, adding more potato starch as needed.
Place the dough on the prepared baking sheet and spread out evenly to about 1⁄2 inch thick. Sprinkle the rosemary on top and press it in slightly. Bake for 25 to 35 minutes until browned on top. Cool for 15 minutes before slicing.
